Our Beef

Is bred, and raised here at home, cows and calves alike are fed on whole grains, grass from our lush pastures and our own hay in the winter.   The only other item added to their diet is a mineral supplement. No animal by products, antibiotics or hormones are used in our feeding and growing program.

No irradiation or chemical processing is used in the custom-cutting and freezer-wrapping of your beef.  From the pasture to your freezer with no middlemen, wholesalers, distributors, transporters, market-employees, or other hands.

Slaughter

Your beef is taken to a certified butcher where it is custom-cut to order, Provincially government inspected, freezer-wrapped, and frozen for your freezer. They are a family run business, and have been in business for several generations.

Beef Age

 At Gableridge our grass fed beef  is ready at between 14 and 18 months of age. This seems to be the optimum age for tenderness, and leanness.  Each side of beef should will weigh between 250 to 300 lbs. After the butcher processes the side into cuts for you, you will have between 210 and 225lb of beef for the freezer.  You will need at least 18 Cubic ft. of  freezer space to accommodate the entire side.

Often freezer space is an issue when deciding to buy an entire side, that is why many families 'share' a side splitting the meat between two or more families.

Statistics show that the average mid income family of four consumes an average of 4 lbs of beef per week at home.  At an average price of $10.00 per lb they will spend as much as $2080.00 this year on beef alone. Not including entertaining. As of June, 2009, the average cost of beef cuts retail at your local grocery store are as follows:
  • Metro, No Frills:  $10.00 lb
  • Gableridge Farm:     $3.45 lb

The Canadian Food Inspection Agency advises that 250-300 pounds of beef is enough for an average family of four for less than one year; supplemented with other meats occasionally (such as chicken, fish, or pork).

Availability

Gableridge Farm  is a small family run operation, we do not run hundreds of cattle, in this way we can ensure that we are close to all of our cows and can provide a healthy happy environment for them .  Because of this, our supply of beef is  limited.  Our cattle are usually harvested,  in the fall.  They are available on a first come, first served basis.

Options

Full Side of Beef 

Price per pound is based on hanging carcass side weight before cutting, boning & trimming  
(avg. 350lbs). Yield to the customer is approximately 60% of side weight
(avg. 210lbs) under normal cutting instructions. Please refer to the cutting chart  on the beef cuts page for cutting options, and reference as to what cuts are available in a side of beef. 

Quarter of Beef

A package containing approximately 100lb of beef with a variety of T-bone steaks, sirloin steaks, sirloin tip roast, round steaks, round roasts, rib steaks, cross rib roast, ground beef in 1-1/2lb packages, and stewing beef. Price per pound is final cut & wrapped weight.

Freezer Sampler Packs

Sampler packages are approximately 30-50 lb and contain 2 to 2.5 lb of T-bone steaks, sirloin steaks, sirloin tip roast, round steaks, round roast, rib steaks and cross rib roast plus 8 pounds of ground beef and 4 pounds of stewing beef. Price per pound is final cut & wrapped weight

    Orders are secured, based on first come first serve deposit received.
  2. Delivery to our customers within 25 km of Gableridge Farm is free. Beyond that radius a charge of $0.25 per km will be added to your invoice.
